Apple Chipotle Baked Beans

Serves 8+

Ingredients:
9 slices of bacon (thick cut is preferred if you love bacon the way we do!)
1 small chopped onion
3 cans White/Great Northern beans
2 Tablespoons brown mustard
3/4 cup Apple Chipotle Grilling and Glazing Sauce
12 diced Peppadew peppers

Instructions:
Brown 9 pieces of bacon in a large sauce pan (can hold at least 8 cups of liquid), set bacon aside to cool on a paper towel, keeping the bacon fat in the pan. Brown the onion in the bacon fat (You can see where this is headed, yes? NOT a low-fat recipe!). Add the beans straight from the can, including the liquid. Add remaining ingredients — mustard, Apple Chipotle sauce, Peppadew peppers). Reduce heat to low and simmer for several hours, stirring occasionally.

Notes:
If you’re in a hurry — don’t be… but if you are, you can bring the beans up to temperature quickly on medium heat, stirring frequently, then simmer on low as long as you can before you have to serve them. Trust me, it’s better when all of the flavors have had a chance to blend. Better yet, you can make these a day or two ahead and just warm them up before serving.
