Pulled Pork

Serves 4-8

Ingredients:
5-7 lb. pork shoulder roast 1/10 lb Heather’s Butt Rub

Instructions:
Preheat your oven or smoker to 225 degrees F. Score the fat on the roast. Rub on all the Heather’s Butt Rub. Cook 4 hours. Double wrap in foil & cook another 6 to 7 hours.*
(*at this point you may put the unwrapped pork in a crock pot at it’s LOWEST SAFE setting (instead of back in the oven) & cook the remaining 6 to 7 hours.) Save juices left in the foil. Pull pork apart & shred with 2 forks. Mix with leftover juices. (at this point much of the juice is NOT Fat but rather collagen and the really flavorful juice from the roasting process (you don’t need to use all of it but for heaven’s sake please use some!))

Notes:
Serve on buns with BBQ Sauce on the side.
